When I was 15, in my first month of high school in Tacoma, Washington, I walked into my first specialty coffee shop by myself. I only had five dollars to spend on lunch, and this café was brand new.

A perfect opportunity for curiosity.

The owner was a true coffee guy—completely obsessed. Naturally, I asked for a cup of coffee. He explained that he didn’t have any batch brewing machines yet, so a “regular coffee” would have to be a pour-over.

I didn’t understand what he meant.

He measured some beans on a scale, ground them into a small metal cup, and pulled out what I would later learn was a Chemex pour-over coffee maker. He placed a paper filter inside, rinsed it with hot water, added the coffee, and began gently pouring water over the grounds with a gooseneck kettle.

Fascinating.

As he poured, he told me about the beans—where they came from, how they were processed, how they were roasted—and that this brewing method was the best way to taste coffee as it’s meant to be tasted. He handed me a porcelain cup filled with freshly brewed coffee.

That was the first time someone showed me what coffee preparation really looks like. I was blown away by the flavors. I had a million questions:
How are coffee beans grown?
What is coffee processing?
What does single origin mean?
